For the apple red cabbage, wash the red cabbage and remove the stalk, then shave or very finely chop the cabbage. Wash the apples, peel and remove the core, then cut into fine wedges.
Skin the onion and lard with the cloves. Put the apple slices, the onion with the lard, salt and sugar in the saucepan between the red cabbage, add water and bring to the boil, pre-cook for about 40 minutes and finish cooking in the reheat for 10 minutes.
Season the apple red cabbage with cinnamon and vinegar.
