On a work surface, mix the flour with the egg and a pinch of salt and knead into a dough. Place the dough on top and roll out with a rolling pin or a pasta machine into very thin sheets of dough. Cut these in turn into squares about 10 x 10 cm. Cover with a damp cloth and set aside until ready for quick further use.
