Beat the egg whites and sugar until stiff. Mix the nuts with cornflour and baking powder and fold into the egg white mixture. Fill the dough into a form and bake at 175 degrees for 30-40 minutes and then cool.
Spread the drained pears evenly on the base and spread the cake glaze evenly over them. Whip the cream, cream stiffener and rum back until stiff and spread evenly over the pears.
Garnish with chocolate shavings and eggnog.
