For the bacon rice soup with peas, chop the shallots and spring onion very finely. Remove the rind from the bacon and cut into small cubes.
Blanch the peas in boiling salted water, rinse with cold water and drain well. In a saucepan, sauté bacon, shallots and green onion, add rice and sauté briefly.
Add beef broth, season with salt and pepper and simmer for 25 minutes. Finally, add herbs and peas and let stand briefly.
