Place ham slices on bread slices so that they hang over the edge. Cut mozzarella into even slices and arrange 3 on each ham slice. Fold overhanging ham over mozzarella slices. Top with a slice of bread and press down lightly.
Heat a little olive oil in a frying pan. Once the oil is hot, dip the sandwiches in the eggs and place in the frying pan. toast evenly on both sides until the bread looks golden brown and the cheese melts slightly. Serve hot with a leafy salad.
Tip: It’s best to use your favorite ham – then your dish will taste twice as good!
