For the apricot cake, first beat soft butter until thick and creamy. Gradually add sugar and vanilla sugar. Add eggs and continue mixing until you get a smooth dough. Mix flour and baking powder and then slowly mix with the other ingredients. The last thing to add is the grated lemon zest.

Spread the batter on a well-greased and floured baking sheet and spread it evenly. Spread the halved apricots evenly on the dough with the skin side down.

Bake the apricot cake at 180 °C for approx. 25 minutes.
