For the checkerboard snack, spread butter on pumpernickel. Spread cheese spread on toast. Place one slice each of pumpernickel and white bread on top of each other and press firmly together.
Using a sharp knife, trim edges to make a square. Cut each into four smaller squares and arrange on a platter.
Alternate one around the other square, creating a checkerboard. Drain cocktail cherries and olives.
Slice gherkins, dice Gouda cheese. Thread onto skewers or toothpicks alternately and skewer the “chess pieces” onto the bread squares.
Serve the chessboard snack.
