Preheat oven to 180 °C, line baking tray with baking paper.
Mix wholemeal spelt flour and oat flour. Knead with curd, egg and water to form a dough.
Knead the finished dough again by hand on a floured work surface and roll out to a thickness of approx. 5-6 mm. Cut out the cookies in the desired shape and place them on the prepared baking tray. Bake in the preheated oven for about 15 minutes.
