For the tortilla, preheat the oven to about 200 °C. Sauté the vegetable ingredients (except the tomatoes) together in a little olive oil in an oven-safe pan.
In the meantime, whisk the eggs, add the herbs and season with salt and pepper. When the vegetables are lightly browned, pour the beaten eggs over them.
Allow to set slightly. Then sprinkle the tomatoes and feta on top and place in the hot oven for 15 to 20 minutes. Serve with bread and salad.
