Sift the flour onto a plate. Add the eggs, yogurt, melted butter and water to the center and knead into a dough. Form a roll and cut about 20 slices per recipe. Roll out each slice to about 1 mm thickness.
Place one disk of dough on a greased baking sheet, sprinkle with pistachios, and place the next disk on top, sprinkle, and so on. At the top there must be a dough sheet at the end.
Cut everything into rectangles of about 2 by 4 cm and bake in the stove at medium heat for about 30 minutes.
Put the sugar in a saucepan and cover with water. Add the juice of one lemon and honey. Do everything until the sugar is dissolved. Cool the syrup.
Pour the syrup on the lukewarm baklava and let it soak. Sprinkle again with pistachios if necessary and serve cooled.
Tip: Use creamy natural yogurt for an even finer result!
