For the cauliflower muffins with garlic cheese dip, first wash cauliflower and divide into small florets. Cook in vegetable stock with butter until soft and puree with a stand mixer. Add whipped cream and yolks and season. Beat the egg whites until stiff and fold into the cauliflower puree together with the flour.
Pour the mixture into muffin tins and bake in a preheated oven at 200 °C for about 20 minutes until golden brown.
For the garlic cheese dip, peel the garlic cloves, chop finely and mix with all ingredients. Serve the cauliflower muffins with garlic-cheese dip.
