For the spelt plait, knead all ingredients into a smooth dough, let rise. Divide the dough into 3 parts and roll strings out of it. Now braid the 3 strings like a braid and let rise again a little.
The dough is a bit stickier than with regular flour, but much more airy once it’s done. Whisk an egg yolk with some milk and brush the braid with it.
Bake the spelt plait for 30 minutes at 160 degrees (hot air).
