For the Tortillas Holy Guacamole, first preheat the oven to 160 °C convection.
For the guacamole, halve and pit the avocados. Remove the flesh from the skin with a spoon and roughly chop. Drizzle with lime juice and blend with a blender until smooth. Add salt and pepper and stir in the cilantro.
Wash and clean the spring onions and cut into fine rings.
Wash and dice the tomatoes.
Place the tortillas in a baking dish. Spread the spring onions, diced tomatoes and cheese on top and bake in the oven for 8-10 minutes.
Arrange on plates, garnish with guacamole and serve Holy Guacamole.
