Sauté juniper berries, vegetables, bones in lard, extinguish with wine.
Simmer on low heat for 1 hour.
Caramelize butter with sugar and add to sauce.
Season meat, brown on all sides for 10 minutes.
Put meat into sauce. Garnish with grapes, Williams pears (1/2 pear per person), cranberries.
Our tip: Use high quality red wine for a particularly fine taste!
