For the ribbon noodles with spinach sauce, wash the spinach and cut into coarse strips. Peel and finely chop the garlic. Fry the garlic in a little oil. Add the spinach and let it collapse.
Pour in whipping cream and simmer very gently. Add dried tomatoes and pine nuts and simmer. Add the herb cream cheese and let it melt in the top sauce.
Season with salt (vegetable salt is best here) and pepper. Mix the sauce with the cooked tagliatelle and serve immediately.
