For the pizza strudel, first prepare the strudel dough. Knead all the ingredients except the oil until it is soft and smooth (until it bubbles).
Cover it with oil and let it rest in a warm place (1/2 hour). In the meantime, finely chop peppers (visually beautiful if mixed red, yellow or green) and grate cheese (whichever you like).
Roll out the dough on a floured cloth (possibly coat with oil) and spread it out. Spread the minced sausage, peppers and cheese on it and roll up the strudel.
Beat the egg and brush the strudel on a baking tray. Bake at 180 °C for 30-40 minutes.
When it is nicely browned, enjoy hot with creamy cucumber salad or a light garlic/herb sauce.
