Pepper Roast

Soak a clay pot in water for 15 min. Rub the meat with pepper and put it into the pot. Chop the onion, clean the carrot and the celery, rinse them and cut them into slices. Put everything around the meat and pour red wine over it. Roast in the oven at 175 °C for about 90 min. Remove the meat and let it rest for about 15 min before cutting. Skim the fat from the roasting juices.

Cut the meat into slices and baste with the gravy.
