The washed and dabbed dry fish fillets (150 grams per person) are marinated in a sauce of 4 small onions, 2 fresh red chili peppers, 4 stalks of lemongrass, 4 cloves of garlic (the whole very finely chopped), per fillet three tablespoons of fish sauce (available in Asian stores) and oil, plus sugar, salt and pepper as desired (a total of about 2 tsp of each).

Marinate the fish pieces for at least 30 minutes, then wrap them together with the marinade in a blanched piece of banana leaf (or parchment paper or aluminum foil) like a parcel and cook for about 20 minutes, turning, in the oven or on the charcoal grill. Then open the packets and serve the fish with long-grain rice and a fresh leaf salad with herbs.

Our tip: It is best to use fresh herbs for a particularly good aroma!
