Clean, rinse and dry the lettuce thoroughly, leaving the stems on. Finely dice onions and potato and sauté in olive oil, add clear soup. Season everything with salt, pepper and fresh nutmeg. Sauté the potatoes and onions for seven to eight minutes until tender.
Now add the lettuce. Mix everything with a hand mixer, add whipped cream, season and mix again. Serve the tasty, quickly made soup with a little smoked salmon or just a dash of olive oil. If you want a thinner consistency, just use a tiny bit more clear soup. With a tiny bit of crabmeat, this soup is just as tasty.
