For the Hearty Lentil Stew, cut the bacon into cubes and render in a pot.
Peel and finely chop the onion and garlic.
Add to the bacon in the pot and sauté.
Wash, clean and dice the greens. Add to the pot with the lentils and stir briefly.
Pour in vegetable soup and add the bay leaf. Simmer for half an hour.
Chop the tomatoes and stir them with the juice into the stew. Season to taste with salt, pepper and sugar.
Cut the Waldviertler into small cubes and cook briefly in the hearty lentil stew.
