Hand Selected Shrimps with Orange Pasta and Olive Jus

Instructions:

For the shrimps with orange noodles and olive jus, knead all ingredients except the butter for the noodles into a firm dough, wrap in cling film and let rest for 20 minutes. Then roll out thinly with a pasta machine and cut pasta about 4 mm wide.

For the olive jus, dice shallot and garlic clove and sauté in olive oil without coloring. Deglaze with Noilly Prat and fill up with chicken stock. Reduce slightly, stir in the chopped black olives and finally swirl in the cold butter. Season to taste with salt, pepper and lemon.

Cook pasta briefly in salted water, drain and toss in butter.

Fry shrimp on both sides in olive oil for about 1 minute and add thyme and garlic clove. Season with salt, pepper and lemon, serve with pasta and olive jus and garnish shrimp with orange pasta and olive jus with basil.
