Melt the staghorn salt in cold water. In a saucepan, heat the honey, light butter, sugar and vanilla sugar, stirring (preferably with a wooden spoon) until a smooth mixture is formed. Pour the mixture into a saucepan and let it cool a little. Add the gingerbread spice, one egg and one egg yolk (keep the remaining egg white) and stir. Combine the flour and cocoa and sift in batches over the mixture and fold in, gradually pouring in the milk. Finally, add the dissolved staghorn salt. Let the dough rest for one night.
A day later, preheat the oven to 170 °C and line a baking tray with parchment paper. Gingerbread dough is difficult to spread, so it is easier to spread it evenly in large portions on the parchment paper and then spread it. The amount of dough is enough for one tray. Bake the gingerbread for twenty minutes and then cool.
