Dough:

Beat the yolks with 1 tablespoon of sugar and the lemon zest until creamy. Beat the egg whites with the remaining sugar until stiff and fold into the egg yolk mixture with the flour.

Spread this biscuit dough on the baking sheet lined with parchment paper and bake in the heated oven at 230 degrees for 10-12 minutes. Turn out onto a sugar sprinkled dish, remove the paper and cover the bisquit with a wet dish.

Buttercream:

Allow the cooking chocolate to melt. Cream the butter and yolks with the sifted powdered sugar and take off three tbsp. of it. Mix the chocolate and liqueur into the remaining buttercream.

Further preparation:

Spread the biscuit with 2/3 of the cream and roll it up. Cut a strip about 5 cm wide in advance and roll into two pieces. Spread the remaining cream on the roll. Arrange the two small roulades as ‘sawn-off branches’. Decorate the roulade with sugar flowers and chopped pistachios.
