For flambéed crêpes with rum apples and walnuts, first mix all the ingredients for the crêpe batter, strain through a sieve and let rest for 15 minutes. Then bake 12 crêpes in a pan.
For the apples, lightly caramelize sugar with butter in a wide saucepan, add apple slices and juice. Fold crêpes in half and then repeat again, add the “triangles”, deglaze with rum and flambé briefly. Add the remaining ingredients and simmer for 1-2 minutes.
