For the Easter salad with carrots and avocado, first prepare the dressing. Mix honey with olive oil, lemon juice, lemon zest and chopped pine nuts and season with salt and pepper.

Clean the carrots and slice lengthwise into thin strips with a peeler. Halve the avocado, remove the pit, peel and also slice lengthwise into thin wedges.

Pluck basil leaves from stem and mix with carrots and avocado pieces.

Pour the dressing over the salad and season again with sea salt and a little pepper.

Let the Easter salad with carrots and avocado soak for 5 minutes, then arrange nicely and serve immediately.
