For the pork tenderloin with dried plums, pierce the tenderloin whole lengthwise with a thin knife or the handle of a wooden spoon and stuff with whole plums.
Fry in a little oil until hot, remove from the pan and let it finish cooking in the oven.
Sauté onion and chopped plums in the frying residue, deglaze with red wine and season with salt, pepper, vinegar and possibly a little sugar. Reduce sauce and thicken with cold butter if necessary.
Serve the pork tenderloin with dried plums.
