For red cabbage with raisins, rinse the raisins, drizzle with cognac and cover overnight.
Wash red cabbage and cut or slice into fine strips.
Peel the onion.
Sauté the red cabbage in hot lard. Add bay leaf, peeled onion whole, cloves and cinnamon stick. Season with salt, sugar and vinegar.
Add apple juice and stew for about 1 hour with the lid closed, adding a little water (or soup) if necessary.
Just before serving, add the cognac raisins and warm in the red cabbage.
