Sauté onion in butter until translucent, add carfiiol cooked in milk, then pour white wine and fish stock and simmer for 10 minutes. Pour in whipped cream and simmer again for a few minutes on a gentle heat. Mix, strain and season with a little salt, pepper and nutmeg.
