Creamy Strawberry Charlotte

Rinse, clean and puree strawberries. Soak 3 sheets of gelatin.

Mix one third of strawberry puree, 30 g sugar and 2 tablespoons liqueur.

Squeeze gelatin, dissolve and fold in. Pour into a rinsed charlotte, brioche or other mold (about 1.5 l capacity). Chill.

Drizzle 3 tablespoons of liqueur over the sponge. Line the edge of the mold with them.

Soak 7 sheets of gelatine. Heat wine and 100 g sugar. Cool down a bit. Squeeze gelatine and dissolve in it. Fold in remaining strawberry puree and curd. Chill until the cream begins to gel.

Whip the cream until stiff and fold into the cream. Pour into the mold. Chill for at least 3 hours.

Carefully turn out the mold.

Decorate charlotte as desired with powdered sugar, strawberries, whipped topping and chopped pistachios.
