For the tortelli with carrots and bacon, peel the carrots with a peeler and continue to cut fine strips.

Cut the bacon into fine strips. Cook the tortelli in boiling water. In the meantime, fry the carrots in rapeseed oil (the oil turns a nice yellow), and finally fry the bacon briefly.

Arrange the tortelli, add the fried carrots, bacon strips and the remaining oil and sprinkle with thyme.
