For the classic vanilla crescents, sprinkle flour on the countertop. Crumble the butter at room temperature with the flour and add the powdered sugar and the peeled and grated almonds.
Knead everything into a smooth dough and shape into croissants. Bake in the oven at 180 °C. In the meantime, prepare enough vanilla sugar with powdered sugar in a container.
When you have taken the baked croissants out of the oven, roll them in the vanilla and powdered sugar mixture.
