Drain the chanterelles in a sieve. Heat the fat in a frying pan and sauté the onions until golden. Add the drained mushrooms and mix everything together. If necessary, thicken a little with a dietary binder (e.g. Nestargel). Season to taste and add the chopped parsley. Fill the mushroom mixture into the pancakes and bring to the table.
