For the Styrian trout with pumpkin seed crust, wash the trout and dry with kitchen paper.
Brush thinly with pumpkin seed oil on both sides and inside. Season with fish spice mixture and dust with flour. In a suitable (non-stick coated or enameled pan) heat 2 tablespoons of pumpkin seed oil and the butter (on the electric stove about level 3-4), put the trout and fry for a few minutes until lightly browned. (The breading may turn out colored by the seed oil a little darker than usual, but of course do not burn).
Turn and cook with the lid off until crispy.
Carefully lift onto plates.
As a side dish, serve Styrian trout with pumpkin seed crust with parsley potatoes and fresh green salad with Steirerkraft seed oil.
This goes well with a Styrian Veltliner or Schilcher.
