For the wild garlic salt, wash the wild garlic and dry in a salad spinner. Then chop or puree very finely. Add the salt to the wild garlic mixture and mix well. To dry, line a baking sheet with paper towels and spread the wild garlic salt mixture on it. Leave in a dry place for a few days (not in the apartment, because the wild garlic smells very strong when drying!) If the wild garlic is still too coarse after drying, you can still grind the wild garlic salt in a mill.
