For the Melanzani Feta Toast, preheat the oven to 180 °C grill function. Cut the melanzani into 1.5 cm thick slices. Finely chop the garlic and mix with the olive oil. Cut the feta into cubes.
Brush both sides of the melanzani slices with the garlic oil and place them side by side on a baking tray. Place in the oven and grill for 15 minutes under supervision.
The melanzani should be lightly browned. Turn slices over, place a few cubes of feta on each and grill for another 15 minutes. Meanwhile, toast the toast slices and place on 2 plates.
When the feta cubes begin to brown, remove the melanzani from the oven and divide the slices fairly among the toasts.
