Bacon Meatballs on Sauerkraut

Finely dice the onion. Fry in hot fat. Add sauerkraut. Cut orange in half, wring out one half. Add fruit juice and 4 tbsp. water to sauerkraut. Add juniper berries and bay leaf, steam for about 30 minutes, season.

Soak bread and squeeze out. Cut bacon into cubes and fry in a frying pan without fat until crispy. Clean spring onion, cut into narrow rings. Add the squeezed bread, bacon and spring onion to the minced meat.

Add egg, knead together, season. Form 2 small oval meat loaves and roast in bacon fat for 15-20 minutes. In between turn to the other side.

Peel the second half of the orange so that the white skin is completely removed. Cut orange into slices at the beginning, then into pieces.

Add to the sauerkraut 5 minutes before the end of the cooking time.
