For the apple dumplings fry the apples and strain. Stir butter with yolks and sugar until fluffy, mix with breadcrumbs, almonds, lemon zest, strained apples and beaten egg whites.

Form small dumplings and put them in sugared and boiling white wine and boil for 10 minutes.
