For the steak with red wine shallots, first remove the meat from the refrigerator. It should be at room temperature when you process it.
For the red wine shallots, peel and quarter the shallots. Separate the layers. Sauté them in a little oil. Deglaze with the wines and reduce to a syrupy consistency. Add rosemary and season with salt and pepper. Stir in a little cold butter for a creamy consistency.
Sear the meat in a grill pan without oil for about 1 1/2 minutes on each side (for medium). Remove from the pan and let rest for 3-4 minutes.
Sprinkle the steak with the red wine shallots with cracked pepper and serve with other side dishes of your choice.
